Easy Cheesy Peachy Peasy Salad

This is a refreshing salad that can serve as a first course or side dish.

Ingredients:

  • 2 cups frozen peas
  • 1/2 cup bottled Vidalia onion dressing, light or regular

  • 1 tsp. dijon mustard
  • 1/4 tsp. freshly coarse ground black pepper
  • 1/2 cup canned sliced peaches in light syrup, drained and chopped into 1/2-inch dice
  • 4 slices bacon, fried crisp; drained and crumbled
  • 1/4 cup cashew halves and pieces
  • 4 cups arugula
  • 1 - 4 oz. goat cheese, crumbled

Directions:

Place peas in a microwave-safe medium bowl; cover and microwave on High for 4 minutes; drain and cool completely.

Meanwhile, in a small bowl, combine Vidalia onion dressing, dijon mustard and black pepper. To peas, add peaches, crumbled bacon and cashew pieces. Pour dressing mixture over pea mixture and mix together. Refrigerate until ready to serve.

To serve, place arugula on serving platter. Spoon pea mixture into center of arugula bed and sprinkle crumbled goat cheese over top of pea salad.
