Butter-Free Choco Chip Pecan Cookies

My husband begged me to make cookies the other day. I said yes before I realized I had no butter! I made him these butter-free cookies and he was absolutely in love with them. I'm not a huge cookie fan but I ate about 5 in one sitting!

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/4 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1/2 cup canola oil
  • 1 egg
  • 1 tsp. vanilla
  • 1/4 cup chopped toasted pecans
  • 1 cup chocolate chips (I only had 1 cup chocolate chunks, could've used more!)

Directions:

Preheat oven to 350 degrees F.

Stir flour, baking soda and salt together in one bowl.

In another bowl, whisk together the sugars, oil, egg and vanilla. Add the flour mixture to the oil mixture, stir just until blended. Stir in chocolate chips and pecans.

Scoop up dough by the tablespoon and put on cookie sheet (2 inches apart) covered in parchment paper. Bake for 12-14 minutes. Cool for a few minutes on the cookie sheet, then transfer to a wire rack to cool for a bit longer.

I used 1 cup of chocolate chunks in my recipe because that's all I had in the house, I'd say you could up it a touch more. ;)
