Whole Wheat Pancake Mix

I make this mix and pack it into a quart jar. This makes a big batch of pancakes.


  • 3 cups whole wheat flour
  • 3/4 cup non fat powdered milk
  • 3 Tbsp. packed brown sugar (I use Wheylow gold, a sub for diabetics.)
  • 3 Tbsp. baking powder
  • 1 1/2 tsp. low sodium salt



When I want to make a batch I dump it into a large bowl and add:

  • 3 eggs (or egg substitute equal to 3 eggs*)
  • 1/3 cup of canola oil
  • 2 tsp. of vanilla
  • 2 1/4 cups of water (more if needed)

*Note; 1 Tbsp. of ground flax seed mixed with 1/4 cup of water is a great egg substitute for baking in pancakes, cakes, muffins, etc.

Sometimes I get spunky, and I have added bananas, cinnamon, and chopped pecans to make Banana Pancakes. I have added cinnamon and chopped apples, and I have added blueberry.

We don't make pancakes that often so I will make up a batch of this one and store it in the pantry or frig. Thanks for this recipe, whole wheat is recommended by our Dr. Where would we find "Wheylow gold"? GG Vi
