Mashed Potato Stuffing


  • 6 medium potatoes
  • 1 lb. spicy Italian sausage links
  • 1/2 cup butter
  • 2/3 cup milk
  • 2/3 cup shredded American cheese
  • 1/3 cup grated Parmesan cheese

  • turkey giblets cooked and chopped
  • 2 eggs
  • chopped parsley
  • salt and pepper


Peel potatoes and cook. While potatoes cook fry sausage until thoroughly cooked. Remove from pan and cool slightly. Slice sausage into 1/2 inch rounds and then into quarters, set aside. Mash the potatoes, mixing in butter and milk. Add cheese, stirring well. Add sausage pieces and chopped giblets and mix.

Beat eggs and blend into potato mixture. Add parsley and salt/pepper. The mixture should be smooth and slightly loose like a thick pudding. If mixture is too thick add little more milk. Pour into greased 1 1/2 qt casserole and bake in 350 degree F oven for 30 minutes or until stuffing is set and top is nicely browned.
