Healthy Muffins

Adding a few healthy ingredients can give a quick and healthy breakfast.

Ingredients:

  • 1 box lite yellow cake mix
  • 1 cup raisins
  • 3 cups oatmeal
  • 1/2 lb. carrots (can substitute 8 oz. dried apricots, washed and thinly sliced)

Directions:

Mix cake according to directions on box. As soon as cake is mixed put in oatmeal, raisins, carrots, and 1/2 cup water. Mix with spoon only until ingredients are blended. Put into muffin papers in tins and into oven immediately. Bake according to box directions.
