For cake, prepare cake mix according to package directions. Divide batter evenly between two 8 or 9 inch greased and floured cake pans.
Bake according to package directions. Cool in pans on wire racks 15 minutes; remove from pans. Cool completely.
For filling, combine pudding mix, milk and lemon juice in medium bowl; mix well. Fold in 2 cups of the whipped topping; reserve remaining whipped topping for garnish.
Spread filling evenly onto tops of both cake layers. For fruit topping, arrange banana, kiwi and orange slices on layers; sprinkle with lemon peel. Spread whipped topping over cakes. Note: If you dip the banana slices in lemon juice or lemon-lime soda, it will minimize browning.
