Lentil and Rice Stew

Good meatless meal!

Ingredients:

  • 1/2 cup uncooked lentils
  • 1/2 cup uncooked rice
  • 1/8 cup olive oil or margarine
  • 1 onion, diced
  • 1/4 lb. mushrooms
  • 2 cloves garlic, minced
  • 1 green pepper, chopped
  • 1 quart canned tomatoes
  • 1 quart chicken broth
  • 1 small can tomato sauce

  • 2 cups celery, diced
  • 1/2 cup shredded carrots
  • 2 tsp. cumin
  • 1 tsp. rosemary

Directions:

Saute' onion, green pepper, mushrooms, celery, and garlic in olive oil. Add tomatoes, broth, and tomato sauce. Then add rinsed lentils, rice, and spices. Simmer for 25 minutes or until lentils are soft. Add shredded carrots and simmer 5 minutes more.

Prep Time: 20-25 Minutes
Cooking Time: 25 Minutes
