Macho Mexican Supper


  • 1 1/2 lb. ground chuck
  • 2 large onions, julienned
  • 1 green and/or red bell pepper, julienned
  • 2 cloves garlic, chopped
  • 1 Tbsp. taco seasoning
  • 1 pkg. soft flour tortillas (10 count)
  • 1 can chopped tomatoes (29 oz.)
  • 1 can tomatoes with green chilies (10 oz.)
  • Ad

  • 1 Tbsp. sugar
  • salt and pepper, to taste
  • 4 oz. cheddar or taco cheese, shredded


Preheat oven to 350 degrees F. Saute' ground chuck, onions, pepper, garlic and taco seasoning in skillet, stirring until crumbly; drain. Place 1 tablespoon meat mixture in center of each tortilla. fold envelope-style to enclose filling. Place in large glass casserole, fold-side down. Combine chopped tomatoes, tomatoes with chilies, sugar, salt and pepper in bowl. Heat tomato mixture in same skillet. Cook for 5 minutes. Pour over casserole. Sprinkle with cheese. Bake 25-30 minutes or until cheese is melted. 4-6 servings.
