Another cool spring/summer meal idea.
Ingredients:
	-  6 cups diced, cooked chicken
-  4 hard boiled eggs, coarsely chopped
-  2 cups thinly sliced celery
-  1/4 cup finely diced red onion
-  1 cup slivered pitted ripe olives
-  2 tsp. salt
-  1/4 tsp. pepper
-  1/2 cup mayonnaise or Miracle Whip
-  6 Tbsp. lemon juice
Directions:
	- Place chicken, eggs, celery, onions, olives, salt and pepper in bowl.
-   Blend mayonnaise and lemon juice together; add chicken mixture and gently toss together.  Chill about 1 hour.
-   Serve over shredded lettuce and garnish with sliced tomatoes.
