Oatmeal Cookies

A good old-fashioned cookie recipe. Very, very moist and good!

Ingredients:

  • 1 cup raisins
  • 1/4 cup water
  • 1 cup margarine
  • 1 cup sugar
  • 1 tsp. baking soda
  • 1/2 cup buttermilk
  • 2 eggs, beaten
  • 2 tsp. vanilla
  • 1/2 tsp. salt
  • 2 cups flour
  • 2 cups oatmeal

Simmer raisins in water for 5 minutes. Set aside to cool. Cream margarine and sugar. Add baking soda dissolved in buttermilk, beaten eggs and vanilla. Stir in dry ingredients. Add raisins and raisin juice; mix. Drop by teaspoon onto cookie sheet. Bake at 375 degrees F until brown, about 12-15 minutes.

Servings: varies according to cookie size.
