Fresh Peach Muffins

These are great for holiday breakfasts!

Ingredients:

  • 1 egg
  • 1 cup milk
  • 1/4 cup shortening, melted
  • 2/3 cup sugar
  • 1/2 tsp. salt
  • Advertisement

  • 1/4 tsp. cinnamon
  • 1 tsp. lemon juice
  • 1/4 tsp. vanilla
  • 2 cups unsifted flour
  • 3 tsp. baking powder
  • 1 cup chopped peaches (I like extra peaches so I add more)

Directions:

Beat egg; stir in milk, shortening, sugar, salt, cinnamon, lemon juice, and vanilla. Sift together flour and baking powder and stir into milk mixture just until blended. Do not overmix. Fold in fresh peaches. Fill greased muffin tins 2/3 full. Bake at 450 degrees F for about 20 minutes or until brown.

Servings: about 2 dozen
Prep Time: 15-20 Minutes
Cooking Time: 20 Minutes

Can I use frozen peaches? Fresh peaches are not available yet.
