Cream of Oyster Soup

Wish my dad was still alive today so I could make this for him! He loved oysters!

Ingredients:

  • 1/4 cup butter
  • 1/4 cup flour
  • 1 qt. milk
  • 1 pt. raw oysters
  • 1 tsp. salt
  • 1/4 tsp. celery salt
  • dash pepper

Directions:

Melt butter on low heat and blend in flour. Add milk, stirring constantly, until sauce thickens and is smooth. Add seasoning. Drain oysters, reserving liquids. Cut oysters in medium pieces and add with liquids to hot milk mixture. Heat until edges of oysters curl, about 2 minutes. Great with crackers!
