Roast Beef and Asparagus Appetizers

It will depend on how many spears of asparagus per pound and how thinly the deli department slices the roast beef as to how many appetizers this will make, but generally it's about 3 dozen.

Ingredients:

  • 1 1/4 lb. small diameter asparagus spears, trimmed
  • 8 oz. cream cheese, softened
  • 1/2 cup lemon juice
  • 4 Tbsp. prepared horseradish
  • 3/4 lb. thinly sliced deli roast beef

Directions:

Cook asparagus in a pot for 2 to 3 minutes or until crisp tender. Drain and place asparagus in an ice water bath, place on a cloth dish towel and pat dry.

Meanwhile, combine cream cheese, lemon juice, and horseradish in a small bowl.

Equally spread slices of roast beef with the cream cheese mixture, place an asparagus spear on each beef slice, roll each up tightly and refrigerate, covered, for about an hour before serving.
