Baked Fish

Ingredients:

  • 1 cup chopped onion
  • 1/2 cup chopped celery and tops
  • 1/2 cup chopped parsley
  • 2 lb. fish fillets
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 cup vegetable oil
  • 3/4 tsp. paprika
  • 2 cans tomato sauce

Directions:

Fresh of frozen fillets may be used. If frozen are used, sauce will be thinner. Combine onion, celery, and parsley. Arrange in large shallow 9x13 inch baking dish. Place fish in overlapping layers over the vegetables; season with salt and pepper. Drizzle oil over top. Sprinkle with paprika. Bake at 375 degrees F for 10 minutes. Pour tomato sauce over top. Bake 30-35 minutes longer or until fish is flaky and sauce bubbles. Baste fish frequently with sauce.
