Ingredients

Cake:

  • 1 cup butter
  • 2 cups flour
  • 1 3/4 cups sugar
  • 3 Tbsp. cocoa
  • 1 tsp. baking soda
  • 1 tsp. vanilla
  • 2 eggs
  • 1/2 cup buttermilk
  • 1 cup Coca Cola pop
  • 1 1/2 cups mini marshmallows

Icing:

  • 1/2 cup butter, softened
  • 2-3 Tbsp. cocoa
  • 1/2 cup Coca Cola pop
  • 4 cups confectioners sugar
  • 1 cup pecans, chopped and roasted

Directions

In a large bowl, with an electric mixer on low speed, mix the butter, flour, sugar, cocoa, baking soda, vanilla, eggs and buttermilk together for 1 minute. Add the Coca Cola and marshmallows and blend well. Bake at 350 degrees F for 45 minutes and cool.

For the icing: In a small mixing bowl, mix the butter, cocoa, Coca Cola and confectioners sugar together. Beat until the icing is smooth and add the pecans. Frost the cake and serve.

CAKE

ICING Preheat oven to 350 degrees F

MAKE THE CAKE:. Combine first 3 ingredients in a medium saucepan over medium heat, stirring until butter melts. Remove from heat.

Combine flour, sugar, and baking soda in a large bowl, stir in butter mixture. Add eggs, and stir until well blended.

Stir in buttermilk, vanilla, and marshmallows. Pour into a lightly greased 13x9" baking pan.

Bake for 25-30 minutes or until a pick inserted in the middle comes out clean. Remove from oven; spread icing over warm wake.

ICING:. Combine first 3 ingredients in a medium saucepan over medium heat, stirring until butter melts.

Remove from heat; stir in powdered sugar, vanilla, and pecans. Spoon immediately over warm cake. (11/11/2008)

Coca Cola Cake

I gather you might be looking for the truly old fashioned coca cola cake recipe not the ever-popular one that calls for buttermilk and marshmallows. To me that one is nothing more than a Texas Sheet Cake or what my mother-in-law calls Cookie Cake. Here is one that reminds me of the kind my mother used to make when I was a kid.

Coca-Cola Cake from the 70's

Cream together sugar and oil. Add eggs, melted chocolate and vanilla. Sift flour and add alternately. Add Coca-Cola and baking soda last.

Bake in greased, oblong pan, approximately 9x13 inches, for 30 minutes.

Icing

Combine all ingredients except vanilla in sauce pan, boil for one minute. Remove from heat, add vanilla and beat until cool. Spread on cooled cake.

FOR CHOCOLATE LOVERS:

Combine flour and sugar in bowl. Heat butter,cocoa and COLA to a boil,pour over flour and sugar mixture, mixing thoroughly. Add buttermilk, eggs, soda and vanilla, and marshmallows. Mix well. Bake in a 9x13" greased pan at 350 degrees until done.

Icing: 1 1/2 cups butter 3 tablespoons cocoa 6 tablespoons Coca Cola 2 cups powdered sugar 1 cup Pecans. Mix till smooth and creamy.
