Jellied Waldorf Salad

This is a bit of a different spin on traditional Waldorf salad. It has been in my late husband's family for years and was always a staple on our Thanksgiving, Christmas, and/or Easter dinner table.

  • 1 envelope Knox Unflavored Gelatin
  • 1/3 cup sugar
  • 1/8 tsp. salt
  • 1-1/2 cups water (divided)
  • 1/4 cup lemon juice
  • 2 cups diced apples
  • 1/2 cup diced celery
  • 1/2 cup chopped pecans

Mix gelatin, sugar and salt with 1/2 cup of the water in a small sauce pan. Heat until dissolved. Remove from heat.

Stir in 1 cup water and lemon juice. Refrigerate until thickened (about 30-40 minutes). Makes 4 cups.

Fold in apples, celery and nuts and refrigerate until set.
