Barbecued Black Beans
I'm not always fond of beans unless they are either green or baked, but I have also learned now to really love black beans! This recipe is so good and black beans are very healthy as well.
- 2 (16 oz.) cans black beans, drained
- 1 (14 oz.) can stewed tomatoes
- 1 pkg. frozen corn
- 1 (4 oz.) can chopped green chilies
- 2 Tbsp. barbecue sauce
- 3/4 tsp. ground cumin
- salt and pepper, to taste
- 4 cups cooked rice
Combine beans, tomatoes, corn, green chilies, barbecue sauce, cumin, salt, and pepper in saucepan. Simmer for 10 minutes, stirring occasionally. Serve over hot cooked rice.
Prep Time: 5-10 Minutes
Cooking Time: 10 Minutes
