In a medium bowl; combine cooked rice, sun-dried tomato pesto, thyme and pepper.
Wash mushrooms and remove large stem. Place flat side up on the prepared baking sheet.
Divide rice mixture evenly over prepared mushrooms.
Sprinkle each mushroom with 1 tsp. Parmesan cheese
Bake for 25 minutes until cheese is lightly browned and mushrooms are soft.

Start with jumbo mushroom caps, grill them for couple minutes.
Herb spreadable cheese (like a gourmet spread)
Panko (chinese) breadcrumbs, grated parmesan, provolone and a white fondue type sauce (to mimic their pre-made sauce).
Put the White Fondue Cheese sauce on bottom of dish. Stuff the mushrooms with the Herb Cheese, top that with the panko breadcrumbs that have been mixed with the parmesan, top off with provolone and broil till melted.
Does anyone have this recipe? The one in Gatlinburg burned down and this recipe is addicting. Please help.

In Tucson, Arizona I bought a package of stuffed portobellos. I don't know if they used hamburger or sausage, but oh they were good!

To make stuffed mushrooms slice off the stem of a whole, clean, mushroom. With a small teaspoon (1/8 or 1/4 teaspoon), or small melon baller, scoop out the inside of the mushroom. Fill with a favorite dip or fill with bread crumbs and blue cheese and melt under the broiler for a few minutes.

Combine cheese, bacon, garlic powder, and lemon juice. Spoon in to mushroom caps. Place mushrooms on baking sheet and broil until filling is lightly brown.
Put Brie cheese spread into small bowl. Add bacon, bread crumbs and parsley and mix. Remove stems from mushrooms and wipe caps. Spoon cheese mixture into caps.
Remove stems from mushrooms; reserve caps. Finely chop enough stems to measure 1/3 cup.
Preheat oven to 400 degrees F. Remove stems from mushrooms. Finely chop enough of the stems to measure 1/4 cup; set aside.
I want to pre-cook spinach souffle stuffed mushrooms for Thanksgiving. Will the mushrooms hold up and not be mushy if I parboil them, fill them with souffle and freeze them?

This great recipe disappeared so fast I didn't even get a good photo! It's called cheese stuffed mushrooms.
Prepare stuffing mix according to package directions, omitting margarine and adding 1 1/2 tablespoons Parmesan cheese.
