Stuffed Mushrooms

Ingredients

  • 1 lb. fresh mushrooms
  • 2 small green onion with tops, chopped
  • 4 slices bread, cubed
  • 1/4 tsp. garlic salt
  • 1 tsp. lemon juice
  • 1 egg

Directions

Remove mushroom stems and chop finely . Saute' chopped mushrooms and onions lightly in skillet in small amount of oil. Add bread cubes, garlic salt and lemon juice, tossing to mix. Stir in egg; simmer 1 minute. Stuff mushroom caps with mixture. Arrange in oiled 5x12 inch baking dish. Bake at 350 degrees F for 10 minutes or microwave for 4 minutes.

Colorado Steakhouse Stuffed Mushrooms Recipe

I am looking for the recipe for the Colorado Steakhouse Stuffed Mushrooms. The waitress once told me the recipe, but I forgot some of the ingredients. You stuff the mushroom with three different cheeses and top with a Hollandaise sauce. I remember one of the cheese's was white cheddar, but I don't remember the other two. The restaurant closed up in our area, so any help would be greatly appreciated.

Cleaning Mushrooms For Stuffing

For a speedy cleaning of mushrooms to prepare them for stuffing use a melon ball scooper. It removes the stems and scoops out the fins of the mushrooms very quickly and cleanly. You have perfect caps for filling with your favorite stuffing.

Stuffed Mushroom Caps

Ingredients

  • 2 dozen large mushrooms
  • 1/2 cup soy sauce
  • 1/2 lb. ground beef
  • 1/4 cup minced green pepper
  • 2 Tbsp. bread crumbs
  • 1 egg yolk
  • 1 Tbsp. minced onion
  • 1/2 clove garlic
  • 1/4 tsp. pepper
  • 1/4 tsp. salt

Directions

Remove stems from mushrooms. Marinate caps for 1 hour in soy sauce. Chop stems finely. Combine stems with remaining ingredients in bowl, mixing well. Drain mushroom caps. Stuff caps with meat mixture. Brush tops with soy sauce. Broil for 8-10 minutes. Note: stuffed mushrooms may be frozen before baking. Thaw before baking. Great appetizer!

Stuffed Ontario Portobello Mushrooms

Ingredients

  • 2 cups Cooked Uncle Ben Natural Select Tomato and Basil rice
  • 4 Tbsp. Sun-dried tomato pesto or 1/2 cup tomato sauce
  • 1 tsp. dried thyme
  • 1/2 tsp. black pepper
  • 4 tsp. Parmesan cheese
  • 4 Ontario Portobello mushrooms

Directions

Preheat oven to 350 degrees F. Lightly grease a baking sheet or line with aluminum foil or parchment paper.

In a medium bowl; combine cooked rice, sun-dried tomato pesto, thyme and pepper.

Wash mushrooms and remove large stem. Place flat side up on the prepared baking sheet.

Divide rice mixture evenly over prepared mushrooms.

Sprinkle each mushroom with 1 tsp. Parmesan cheese

Bake for 25 minutes until cheese is lightly browned and mushrooms are soft.

Start with jumbo mushroom caps, grill them for couple minutes.
Herb spreadable cheese (like a gourmet spread)
Panko (chinese) breadcrumbs, grated parmesan, provolone and a white fondue type sauce (to mimic their pre-made sauce).

Put the White Fondue Cheese sauce on bottom of dish. Stuff the mushrooms with the Herb Cheese, top that with the panko breadcrumbs that have been mixed with the parmesan, top off with provolone and broil till melted.

Waldo Pepper's Crab Stuffed Mushrooms

Does anyone have this recipe? The one in Gatlinburg burned down and this recipe is addicting. Please help.

Recipe for Safeway Store Stuffed Portobello Mushrooms

In Tucson, Arizona I bought a package of stuffed portobellos. I don't know if they used hamburger or sausage, but oh they were good!
Can anyone help me out?

Stuffed Mushrooms

To make stuffed mushrooms slice off the stem of a whole, clean, mushroom. With a small teaspoon (1/8 or 1/4 teaspoon), or small melon baller, scoop out the inside of the mushroom. Fill with a favorite dip or fill with bread crumbs and blue cheese and melt under the broiler for a few minutes.

After taking off the stem and scooping out the inside, chop it all up and saute in a pan with butter,minced onion & garlic... then add more melted butter and then stir in italian flavored bread crumbs and bake in the toaster oven till browned on top. You can substitute olive oil for the butter and also add in some crab meat for an extra treat. (03/31/2007)

Clean about a dozen button mushrooms. Remove and chop the stems. In a small bowl mix chopped stems with 2 tablespoons flavored cream cheese. I like vegetable or chive. Add some dried parsley, dried onion, Spike, seasoned salt, etc. Stuff the caps with this mixture. Top each with bread or cracker crumbs. Bake on a greased cookie sheet for 7 minutes of until cheese is hot and tops are browned. (01/18/2006)

Brown a half pound of sausage with some chopped onions. Drain and add 8 ounces of cream cheese. Stir until melted. Stuff into mushrooms. Top with dry bread crumbs. Drizzle with butter and bake at 350 until browned on top, about 20 minutes. This is soooo good. (01/19/2006)

Remove stems from muchrooms; finely chop 1/4 cup stems. 2. Cook and stir chopped stems, onion and pepper in margarine in skillet over medium heat until tender. If you've ever been to Houlihan's, their stuffed 'shrooms are excellent! I got this from aaa-recipes.com: Houlihan's 'Shrooms Cheese Filling 1/3 cup whipped cream cheese 1/4 cup shredded sharp Cheddar cheese 1/2 teaspoon dry Hidden Valley Ranch Dressing Mix Combine cream cheese, Cheddar cheese and dressing mix. Let stand for 10 to 15 minutes. 6 large button mushrooms 1 cup bleached flour 1 1/2 teaspoons salt 1/2 teaspoon cayenne pepper 1/2 cup buttermilk Vegetable oil for frying Clean mushrooms and remove stems. When cheese has rested, use a teaspoon to fill mushroom caps. Combine flour, 1 1/2 teaspoons salt and cayenne pepper in a small bowl. Pour milk into another small bowl. Dip mushroom first in milk and then in flour. Do this twice. Put coated mushroom into the freezer for at least 3 hours. When mushrooms are frozen, heat oil in a deep fryer to 350 degrees F. Use enough oil to cover mushrooms completely. Fry for 8 to 10 minutes until golden. Drain. Let sit for a couple of minutes before serving. Yields 4 servings. (01/19/2006)

Aahhh, use chopped stems from the 'shrooms mixed with finely chopped shallots, bacon bits and cheese of your choice. I use finely grated extra sharp cheddar. I also use a little hot sauce to spice things up a bit. Oh, and butter... gotta have butter. The bacon and shallots make the dish, everything else is optional. Then just broil them until nicely browned and pig out. I can't imagine making less than forty or so because they tend to evaporate. You'll know when you get them right because your tongue will leap from your face and slap your brains out. Trust me here, that's a small price to pay. (01/22/2006)

I always get raves from this recipe: Chopped shrimp and or crab, cream cheese, garlic, green onion. Mix together and fill mushroom caps. You can use the stems chopped up, too. Top with shredded monterey jack or whatever cheese you like. Bake at 350 till bubbly. (01/23/2006)

Stuffed Mushrooms

Ingredients

  • 1/2 lb. seasoned sausage
  • 1/4 cup chopped onion
  • 1/4 cup green pepper
  • 1 cup shredded Cheddar cheese
  • 2 lb. fresh mushrooms

Directions

Brown sausage and drain. Add onion and green pepper and 1/2 of shredded cheese. Wash mushrooms and take out stems. Stuff with meat mixture. Sprinkle with rest of cheese. Bake at 350 degrees F for 20-25 minutes.

Savory Stuffed Mushrooms

Ingredients

  • 16 fresh, large size mushrooms
  • 1/2 cup butter
  • 3 Tbsp. green pepper, finely chopped
  • 3 Tbsp. onion, finely chopped
  • 1 1/2 cups fresh whole wheat bread cubes
  • 1/2 tsp. salt
  • 1/8 tsp. pepper

Directions

Preheat oven to 350 degrees F. Wipe mushrooms with a damp cloth. Remove stems and chop stems fine. Heat 3 Tbsp. butter in large skillet. Saute' mushroom caps, only on bottom side, 2-3 minutes. Remove. Arrange, rounded side down, in a shallow baking pan. Heat rest of butter in same skillet. Saute' chopped mushroom stems, green pepper, and onion until tender, about 4 minutes. Remove from heat. Stir in bread cubes and seasonings. Use to fill mushroom caps, mounding mixture high in center.

Combine cheese, bacon, garlic powder, and lemon juice. Spoon in to mushroom caps. Place mushrooms on baking sheet and broil until filling is lightly brown.
