  • 4 eggs
  • 2 cups sugar
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 cups flour
  • 1 cup boiling water
  • 2 tsp. vanilla
  • peanuts, crushed or ground

Beat eggs until fluffy, add sugar gradually. Add water, vanilla, then dry ingredients.

Bake in sheet pan. When cool, cut into squares and spread with the following.

  • 1 lb. Powdered sugar
  • 1 stick oleo (margarine)
  • milk (add a few tablespoons at a time until desired thickness)

This won't be very thick. Ice squares one at a time and roll in crushed or ground peanuts. It is helpful if you have a helper to do this!

  • 2/3 cup white syrup

  • 3 eggs
  • 1/2 (12 oz.) can evaporated milk
  • 1/2 pound shortening
  • 1/2 cake yeast
  • 4 cups flour
  • Powdered Sugar

Nut Filling:

  • 1 pound ground walnuts
  • 1/2 cup sugar
  • 3 Tbsp. butter (no margarine or spread)
  • 1/3 cup honey

  • 2 eggs, beaten

Scald milk. Cool to safe temperature for yeast. In a separate pot, melt shortening. Beat eggs. Dissolve yeast in the warm milk. Add shortening and beaten eggs. Add flour, 2 cups at a time. Knead dough. Cover and refrigerate overnight.

To prepare filling, combine the first 5 ingredients in a saucepan. Bring to a boil. Add beaten eggs and cook 2 minutes. Remove from heat. Heat oven to 375 degrees F. Roll manageable portions of the dough very thin in powdered sugar. Cut in 3x3-inch squares. Place 1 tsp. filling in one corner of a dough square. Roll up, starting at that corner, and seal edges. Place on greased cookie sheet, Sprinkle with powdered sugar. Bake 15 to 20 minutes or until lightly browned.

Makes 50 to 75 cookies. Watch carefully due to various ovens temperatures.

Source: Not sure where this recipe came from. Have made it many times over the years for the holiday season.
