Elegant Tuna Shepherd's Pie

Ingredients

  • 2 cans chunk tuna, drained
  • 1 1/2 cups frozen peas (thawed)
  • 1 1/2 cups cooked, sliced carrots
  • 1 can mushroom pieces, drained
  • 1 can cream of mushroom soup
  • 1/4 cup milk
  • 1/2 cup finely chopped onion
  • 4 cups seasoned mashed potatoes

Directions

Combine the tuna, peas, carrots, mushroom pieces, soup and milk and mix well. Beat the onion into the mashed potatoes. Arrange half of the potato mixture in a greased 2 qt. casserole and top with the tuna mixture. Spoon the rest of the potatoes around the edge of the casserole, and bake in a 350 degree F oven for about 45 minutes.

This looks as if it is delicious. Tuna is a great budget stretcher. I love the Albacore Tuna that we can buy at Costco in the blue can. It is the very best tasting tuna around. It reminds me of a Tuna Casserole recipe but with spuds instead of noodles. I am going to give it a try! Thanks!
