Maui Onion Dish

Ingredients

  • 1 cup long grain rice
  • 1/2 cup butter
  • 3 1/3 lb. yellow onions, chopped (use Vidalia or other sweet onion)
  • 1 cup Swiss cheese
  • 1 cup whipping cream
  • 2 Tbsp. fresh parsley
  • 1 Tbsp. paprika

Directions

Butter 9x13 inch pan. Cook rice in boiling water for 5 minutes. Drain. Melt butter in a saucepan. Add onions and cook until golden, about 30 minutes. Mix in cheese and cream. Add rice and parsley. Turn into baking dish. Sprinkle with paprika. Bake at 325 degree F for 1 hour. Note: Can be prepared 1 day ahead. Cover and refrigerate.
