Holiday Oatmeal Cake

  • 1 cup regular oatmeal
  • 1 1/2 cups hot water
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1/2 cup shortening
  • 2 eggs
  • 1 1/2 cups flour
  • 1 tsp. cinnamon
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 tsp. vanilla
  • 1 cup pecans
  • 1 cup angel flake coconut

Pour hot water over oats and let stand 20 minutes. Beat together white sugar, brown sugar, shortening, and eggs. Mix together flour, cinnamon, baking powder, baking soda, and salt. Combine the 3 mixtures. Add vanilla, nuts, and coconut. Pour into greased 9x13 inch glass baking dish. Bake at 350 degrees F for 45-60 minutes. Topping:

  • 1/2 cup brown sugar
  • 1/2 cup margarine
  • 1 cup nuts
  • 1/2 cup milk
  • 1 tsp. white syrup
  • 1 cup coconut

Cook brown sugar, margarine, milk, and white syrup together in a pan for 5 minutes over warm heat. Add 1 cup nuts and 1 cup coconut to the warm topping mixture. Stir together. Spread topping over warm cake. Put completed cake under oven broiler to brown coconut. By Robin
