Blue Cheese Dressing

This is nothing like the Blue Cheese Dressing from the store - it's much better. You only taste the natural ingredients. You'll never want to go back to the other stuff. Creamy, blue cheesy and oh so delicious.

  • 1/2 tsp. mild mustard
  • 3 Tbsp. fresh lemon juice
  • 2 Tbsp. vinegar
  • 2 oz. Danish blue cheese, crumbled
  • 1/2 cup olive oil
  • freshly ground pepper to taste

Directions:

Mix mustard with lemon juice and vinegar. Add crumbled cheese and mash thoroughly. Gradually add olive oil, stirring until the dressing is completely smooth. Season to taste with pepper.

RE: Blue Cheese Dressing

Just wanted to say it was great! Thanks for the recipe, we use a lot of blue cheese for wings, salad, pizza and so on. I even got my 13 year old daughter in the kitchen helping make it! Thanks a bunch! (02/13/2005)

Mix 4 oz crumbled blue or feta cheeses to 16 oz. nonfat plain yogurt. Add 2 Tbsp. cider vinegar, mix to blend and allow flavors to blend in refrigerator for a few hours. This is thick, can makes a great veggie dip, too.
