Oriental Cucumber Salad
- 1 large English cucumber, peeled and sliced as close to paper thin as possible
- 1 tsp. salt
- 1 Tbsp. sugar
- 1 Tbsp. soy sauce
- 1/4 cup rice wine vinegar
- 1 tsp. sesame oil, not dark
- 2 tsp. sesame seeds, toasted
Sprinkle cucumbers with salt in a bowl and toss. Add sugar, soy sauce, rice wine vinegar, sesame oil, and toss. Sprinkle with sesame seeds, toss, marinate for 20 minutes and serve.
