Chocolate Tapioca Pudding
2 cups milk 1/2 cup honey 1/4 cup quick-cooking tapioca 1/2 cup semi-sweet chocolate morsels 1 teaspoon vanilla extract
In a medium saucepan, stir together the milk, honey and tapioca. Let it stand for 10 minutes. Place the saucepan over medium-high heat. Stirring frequently, bring the mixture to a boil. Continue to cook and stir for 3 more minutes. Remove from heat. Add the chocolate morsels and vanilla. Stir until the chocolate is melted and the mixture is smooth. Serve warm or cold.

Chocolate Tapioca Pudding
1/2 cup sugar 3 tablespoons quick cooking tapioca 3 cups whole milk 1 large egg, beaten 1 teaspoon ground cinnamon 3 ounces semisweet chocolate 1 teaspoon vanilla extract 1 teaspoon rum extract
In a medium saucepan, combine sugar, tapioca, milk and egg. Let stand for 5 minutes. Add cinnamon and chocolate to saucepan and cook over medium heat until pudding comes to a full boil, stirring continually to prevent burning. Remove from heat and stir in vanilla and rum. Cool for 20 minutes. Stir for creamy texture. Serve warm or chilled.
