Scald 1 cup milk in top of double boiler. Add tapioca; cook 20 minutes or until tapioca is transparent. Stir frequently.
Beat egg yolk. Add sugar and salt. Put tapioca mixture with egg yolk. Put over bottom of double boiler; cook until thickened. Remove from heat; fold in stiffy beaten egg white, vanilla, and chocolate blended with half cup scalded milk.

I am looking for a recipe to make chocolate tapioca pudding. No instant please.

Chocolate Tapioca Pudding
1/2 cup sugar
3 Tbsp. quick cooking tapioca
3 cups whole milk
1 large egg, beaten
1 tsp. ground cinnamon
3 oz. semisweet chocolate
1 tsp. vanilla extract
1 tsp. rum extract
In a medium saucepan, combine sugar, tapioca, milk and egg. Let stand for 5 minutes. Add cinnamon and chocolate to saucepan and cook over medium heat until pudding comes to a full boil, stirring continually to prevent burning. Remove from heat and stir in vanilla and rum. Cool for 20 minutes. Stir for creamy texture. Serve warm or chilled.

In a medium saucepan, stir together the milk, honey and tapioca. Let it stand for 10 minutes. Place the saucepan over medium-high heat. Stirring frequently, bring the mixture to a boil. Continue to cook and stir for 3 more minutes. Remove from heat. Add the chocolate morsels and vanilla. Stir until the chocolate is melted and the mixture is smooth. Serve warm or cold. (05/11/2006)
