Microwaving Squash

I love Squash, but it takes so long in the oven so I use the microwave.

Cut in half, remove seeds, place cut side up.

  • Acorn Squash (1 1/2 lbs.) 8 to 10 minutes
  • Butternut Squash (3 lbs.) 10 to 14 minutes
  • Spaghetti Squash (3 lbs.) 10 to 14 minutes

Test for doneness! All Microwaves are not created equal.

Wrap them in a wet paper towel and cook about 5 minutes in the microwave. Good.

I don't cut them in half. I pierce them with a knife (you know, stab them!) and put them in the microwave whole. Cook them about 7-9 minutes, depending on the size. Let them sit for a few minutes (they're like potatoes and continue to cook). Cutting them in half is a snap and removing the seeds is no problem either.

I love using spaghetti squash in place of pasta...I cut them in half, remove the seeds, place cut side down in a baking dish, add about 1/4 cup of water, cover with waxpaper, and microwave only 7 minutes, no matter the size of the squash. This way, the squash retains some of their crispness, and are not mushy. I think it holds up to the sauce better. Give it a try...NOW...if someone can please tell me how to easily cut them in half.
