Easy Veggie Rice Medley
- 1 Tbsp. canola oil
- 1 each, onion, carrot, and stalk celery, chopped
- 1/2 red pepper, chopped
- 1 can chicken broth
- 1 1/2 cup Minute Rice, uncooked
- 1 cup frozen peas
Heat oil in a skillet. Add onion, carrot, celery and pepper; cook 5 minutes or until tender. Stir in rice and peas; cover. Simmer 5 minutes. Remove from heat. Let stand 5 minutes before serving.
