Peach-Glazed Pork Chops
- 1 can sliced peaches (16oz.)
- 2/3 cup hot water
- 1/4 cup margarine
- 1 package stove-top stuffing mix
- 10 thick deboned pork chops
- 1/2 cup peach preserves
- 1 1/2 Tbsp. Dijon mustard
Preheat oven to 350 degrees F. Drain peaches, reserving syrup. Chop peaches. Mix water and margarine in bowl. Stir in stuffing mix, peaches and reserved syrup. Trim fat from chops. Place chops in 9x13 inch baking pan. Combine preserves and mustard in bowl. Brush over chops. Cover with stuffing mixture. Bake 45 minutes or until done.
