Shredded Brussels Sprouts
- 1 lb. Brussels sprouts, shredded (I use the slicer portion of a grater)
- 2 Tbsp. extra virgin olive oil
- salt and pepper to taste
- 1 small shallot, thinly sliced
- 1/2 bell pepper, chopped
- 2 tsp. minced garlic
- 1/2 cup chicken broth
- 1 Tbsp. butter, softened
- red pepper flakes to taste, if desired
Heat the oil over high heat in a large skillet and immediately stir in the Brussels sprouts, salt and pepper and cook for 3 minutes. Stir in the shallot, bell pepper, and garlic. Add chicken broth and cook until evaporated, about 2 minutes. Turn off the heat, stir in the butter and red pepper flakes and serve.
