Zucchini Bread

Zucchini Bread I

Ingredients

  • 3 eggs
  • 1 1/2 cup sugar
  • 1 cup vegetable oil
  • 3 medium sized zucchini, (grated and well drained, must have 2 cups)
  • 2 tsp. vanilla
  • 1/4 tsp. almond extract
  • 2 cup flour
  • 1 tsp. salt
  • 1/4 tsp. baking powder
  • 2 tsp. soda
  • 2 tsp. cinnamon

Directions

Mix ingredients well and pour into greased and lightly floured bread pan. Bake at 350 degrees for 1 hour or until done.

Zucchini Bread II

Ingredients

  • 3 cups flour
  • 2 cups sugar
  • 3 tsp. cinnamon
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/4 tsp. baking powder
  • 2 cups zucchini (shredded)
  • 1 cup vegetable oil
  • 2 tsp. vanilla
  • 1/2 cup nuts (chopped)

Directions

Heat oven to 350 degrees F. Grease and flour bottom only of 2 loaf pans. In a large bowl, blend all ingredients except nuts until moistened; beat 1 minute at medium speed. Stir in nuts. Pour batter into prepared bread pans. Bake at 350 degrees F for 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; loosen edges and remove from pan. Makes 2 loaves, 24 slices.

Zucchini Bread III

Ingredients

  • 3 eggs (beaten)
  • 1 cup oil
  • 1 1/4 cups brown sugar
  • 1 1/2 cups white sugar
  • 2 cups grated zucchini
  • 3 tsp. vanilla
  • 3 cups flour
  • 1 1/2 tsp. soda
  • 1 1/2 tsp. baking powder
  • 1 1/2 tsp. salt
  • 3 tsp. cinnamon

Directions

Mix and bake 1 hour at 350 degrees F.

Zucchini Bread IV

Ingredients

  • 3 eggs
  • 1 cup oil
  • 2 cups sugar
  • 3 cups flour
  • 1 tsp. salt
  • 1 tsp. soda
  • 3 tsp. cinnamon
  • 1/4 tsp. baking powder
  • 3 tsp. vanilla
  • 1/2 cup chopped nuts and/or raisins
  • 2 cup zucchini peeled and grated

Directions

Beat eggs, add oil, sugar and vanilla. Mix well. Add zucchini, nuts and dry ingredients. Pour into 2 greased loaf pans. Bake at 325 degrees F for 60-75 minutes.

Zucchini Bread V

Ingredients

  • 3 eggs, beaten
  • 2 cups sugar
  • 1 cup oil
  • 3 tsp. vanilla
  • 2 cups peeled and grated zucchini
  • 3 cups flour
  • 1 tsp. salt
  • 3 tsp. cinnamon
  • 1 tsp. soda
  • 1 cup chopped nuts

Directions

Beat eggs, sugar, oil and vanilla. Add zucchini. In separate bowl, sift flour, salt, cinnamon and soda. Mix with liquids. Add nuts. Bake in 3 greased loaf pans at 325 degrees F for 1 hour.

Zucchini Bread VI

Ingredients

  • 3 cups sugar
  • 1 cup oil
  • 3 eggs
  • 2 cups grated zucchini
  • 2 tsp. cinnamon
  • 2 tsp. vanilla
  • 2 cups flour
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 1 cup nuts (opt.)

Directions

Blend sugar and oil; add eggs and vanilla and beat. Then add zucchini and unsifted flour and salt. Add nuts last. Grease and flour pans. Bake at 350 degrees F till done.

Zucchini Bread VII

Ingredients

  • 3 beaten eggs
  • 1 cup vegetable oil
  • 2 cups sugar
  • 2 cups finely grated unpeeled zucchini
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 3 tsp. vanilla
  • 1 tsp. salt
  • 3 cups flour
  • 3 tsp. cinnamon
  • 1 cup chopped nuts (pecans or walnuts)

Directions

Mix first three ingredients together. Then add remaining ingredients. Pour mixture unto 2 greased and floured loaf pans. Bake at 350 degrees F for one hour, or until done. If you use a glass dish, bake at 325 degrees F.

Source: This recipe came from my grandmother. It is our favorite!

Gee thanks so much for the recipes, awhile ago I was looking for a zucchini bread recipe as an old friend of mine used to make a very good one. I will try these in time and post which one reminds me of the one she used to make. Thanks again
