Chicken and Dressing Casserole

This recipe calls for chicken, but it is a great way to use left over turkey from the holiday meals as well.

Ingredients:

  • 1 can evaporated milk
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1/2 stick margarine, melted
  • 4 cups cooked, chopped chicken
  • 1 box stuffing mix (like Stove Top)
  • 1 can mushroom pieces

Directions:

Heat oven to 350 degrees F. Saute' onion, celery and mushroom in margarine until semi-tender. Add soups and evaporated milk and heat through. In a large bowl, add chicken and dressing mix (including seasoning packet). Pour soup mixture over meat and dressing mixture in bowl. Mix until coated. Place into greased 9x13 inch pan. Bake at 350 degrees F for 45 minutes.

Tip: Chicken and Dressing Casserole

Ingredients

  • 4 boxes Stove Top Stuffing
  • 6 - 8 chicken breasts (boiled and shredded, save broth for later)
  • 4 sticks of butter
  • 6 - 8 boiled eggs (chopped)
  • 2 cans chicken broth

Directions

In large bowl add stuffing mix, shredded chicken, 3 sticks melted butter, chicken broth and chopped eggs. If need, add enough water from the boiled chicken until moist. Empty into large greased casserole dish. Cut up remaining butter and lay on top. Cover with foil. Bake 1 hour at 375 degrees F. Remove foil and broil until top is brown.

Source: I got this recipe from my daughter. She got it from her mother in law. I'm not sure where she actually got it.
