Hamburger Soup

Ingredients

  • 2 lb. ground beef
  • 5 3/4 cups tomato juice
  • 1 cup stewed tomatoes
  • 2 tsp. basil
  • 2 tsp. oregano
  • 2 Tbsp. dried onion flakes
  • 1 bay leaf
  • 1 Tbsp. Worcestershire sauce
  • 1 Tbsp. garlic powder
  • 2 cups chopped celery
  • 1 cup sliced carrots
  • 2 cups shredded cabbage
  • 2 cups French-style green beans
  • salt and pepper, to taste

Directions

Brown ground beef in soup pot. Drain pan drippings. Add remaining ingredients, mixing well. Cover and bring to a boil and reduce heat. Simmer for 2 hours.

I use hamburger when I make stew, too. I am amazed when I mention hamburger stew to people, they can't figure out what I am talking about, and why I don't use stew meat(hamburger is cheaper.) My Mother did this too, that is where I learned to do it. The other day I had one lady even ask me if I crumble the hamburger up before putting it in the mixture. I sat here and thought no, I just put the whole lb. chunk in the way it is. lol.

Recipe: Yummy Hamburger Soup

Brown 1 pound of hamburger in a Dutch Oven with 1 cup of chopped onions and 2 teaspoons salt. Add 1 cup of chopped, peeled carrots and 1 cup of chopped, peeled potatoes. A teaspoon of parsley is nice but optional. Then add a quart of homemade tomatoes and a cup or two of water and let it simmer for 20 minutes. Taste for salt and serve with a slice of homemade bread or a biscuit. I often have seconds.

My Mother's Hamburger Stew (I've tweeked it some)
  • 1-1 1/2 lbs hamburger
  • 1/2 onion, chopped
  • 1/2 green bell pepper, chopped
In a big pot add all of above and saute until hamburger is browned, drain, put back in pot. Add rest of ingredients except cabbage.

Add:

  • 1 can stewed tomatoes
  • 1-8oz can tomato sauce
  • 2 cups potatoes. cubed
  • 1 heaping cup carrots or 1 can (do not drain)
  • 1 can green beans (do not drain)
  • 1/2 pkg dry spaghetti mix or 1-2 Tbsp. taco seasoning
  • Salt, pepper and other seasonings of your choice*
*I use garlic powder, onion powder, dried parsley and 2 bay leaves, remove bay leaves before eating.

Mix and stir well. Add water to cover 1/2 inch above, can always add more. Add 1/4 head chopped (not too small) green cabbage, don't stir the cabbage in. Bring to boil and turn heat down,simmer until the potatoes are done. If it isn't as thick as you like, thicken with instant potatoes.

Can be made in a crockpot. Even better reheated the next day. Feeds a bunch. :) (10/07/2006)

  • 3 onions, chopped
  • 3 cans tomatoes (16oz. each)
  • 3 stalks celery, chopped
  • 1 Tbsp. sugar
  • 1 Tbsp. seasoning salt
  • salt and pepper
  • dash Worcestershire sauce
  • 4 carrots, cut in rounds
  • any left over veggies with juice (peas, beans, or okra)
  • 1 can beef broth (if needed)

Directions

Saute' meat. Add onions and cook 15 minutes. Add tomatoes, celery and seasonings. Cook slowly 2 hours. Add carrots and cooked veggies. Cook until done. Add beef broth if needed.

Fast & Frugal Hamburger Soup

Ingredients

  • 1-1/2 pounds ground beef
  • 2 cups diced onions
  • 1 cup diced carrots
  • 1 cup diced celery
  • 3 garlic cloves, minced
  • 3 cans (14-1/2 ounces each) chicken broth
  • 1 can (15 ounces) crushed tomatoes
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon hot pepper sauce
  • 1/4 cup stick margarine
  • 1/2 cup all purpose flour

Directions

In a large saucepan or soup kettle, cook the beef, onions, carrots, celery and garlic over medium heat until meat is no longer pink and vegetables are tender; drain. Stir in broth, tomatoes, Worcestershire sauce and hot pepper sauce. Bring to a boil. Reduce Heat; cover and simmer for 15 minutes.

In another saucepan, melt margarine over medium-low heat. Stir in flour until smooth. Cook and stir for 6-8 minutes or until mixture turns golden brown. Carefully stir into soup. Cover and simmer for 15 minutes, stirring occasionally. Yield: 10 servings (2-1/2 quarts).

You'll love it, it's priced at a mere 68 cents a bowl.

Ingredients

  • 1 lb. hamburger (brown and drain)
  • 1 onion (chopped)
  • 1 can tomato paste or 1 can tomato soup
  • 2 cup water
  • 1/2 envelope Lipton onion soup mix
  • 1 can mixed vegetables

Directions

Brown and drain hamburger. Add remaining ingredients. Bring to a boil and simmer 25 minutes. It's good with a little chopped celery in it. Cook celery a little before putting in soup.

  • 4 cups V-8 or tomato juice or half of each

Directions

Brown ground beef and drain. Add soup mix and enough water to cover. Simmer for 10 minutes. Add vegetables and tomato juice or V-8. Season to taste. Simmer for another 10 minutes.

I just made this for my partner the other day. He grew up on it (he seemed to enjoy it, I just could not bring myself to try it.) Included is the disclaimer I got from my partner's mom when we requested the recipe:

"Remember moms never use precise measures--a little of this, a little of that..."

While preparing onions and; hamburger, you can pre-boil water in a kettle. This will create less time to bring water to boil later when you add to pot. Use 4 quart pan for soup.

Saute medium chopped onion in a little olive oil in 4-quart pan. When soft, saute 1 pound hamburger with onions until hamburger no longer red.

Add (boiling) water to mixture. Bring to boil. Add about 3/4 large bag of egg noodles or elbow macaroni, or combination of both, or whatever kind of pasta you want. Cook until still a little hard (al dente). The noodles will continue to cook while resting in hot liquid.

This soup will turn into a stew rather than a soup upon reheating (gets real thick). Never bring soup to a boil when reheating, because you will create mush.

If you use real lean hamburger, add 2-3 bouillon cubes to add taste. Add a little oregano if you like an Italian flavor.

Right before serving, add a can of stewed tomatoes and let them heat through. (01/08/2008)

(*I usually trade kidney beans for the split peas--they don't go over very well here)

  • 2 lbs ground beef
  • 2 Tbsp. olive oil
  • 1/2 tsp. salt
  • 1/4 tsp. each pepper, oregano, and basil
  • 1/8 tsp. seasoned salt
  • 1 package onion soup mix
  • 6 cups boiling water
  • 1 can (8 oz) tomato sauce
  • 1 Tbsp. soy sauce
  • 1 cup celery, sliced crosswise
  • 1/4 cup celery leaves, torn in large pieces
  • 1 cup sliced carrots
  • 1/3 cup dried split peas*
  • 1 cup elbow macaroni
  • Grated Parmesan cheese
In a large saucepan or kettle having a tight fitting lid, brown meat in oil. Add salt, pepper, oregano, basil, seasoned salt and onion soup mix. Stir in boiling water, tomato sauce and soy sauce. Cover and simmer 15 minutes. Meanwhile, prepare celery, celery leaves and carrots, then add to simmering mixture with split peas and continue to cook for 30 minutes. Add macaroni and simmer for 30 minutes longer, adding more water if necessary. Pass grated Parmesan cheese to be sprinkled over individual servings. Makes 6 to 8 servings. (01/08/2008)

  • 1/4 cup shredded carrots

  • 1 medium onion, chopped
  • 1 tsp. salt (I did not add any salt)
Brown beef in skillet, chopping into bite size pieces as it browns. Drain and add to 3 cups boiling water in sauce pan. Add remaining ingredients and simmer for approximately 30 minutes or until the vegetables are tender. Makes 2 servings (01/09/2008)

      Brown beef, drain off fat. Add onion; cook til tender (15 minutes). Stir in all ingredients except tomatoes. Heat to boil, reduce heat, cover and simmer 20 minutes.       Minestrone Hamburger Soup

      • 1 pound ground beef
      • 1 cup onion(s)
      • 1 cup potato
      • 1 cup carrot(s)
      • 1/2 cup celery
      • 1/2 cup green cabbage chopped
      • 2 and 1/2 cup canned tomatoes, undrained
      • 1/4 cup uncooked white rice
      • 1 leaf bay leaf
      • 1/2 tsp dried thyme
      • 1/4 tsp basil
      • 5 tsp table salt
      • 1/2 tsp black pepper
      • 6 cups water
      Instructions

      Cook beef with onion until slightly browned. Add potatoes, carrots, celery, cabbage and tomatoes. Bring to boil. Sprinkle in rice, add bay leaf, thyme, basil, salt, pepper and water. Cover and simmer 1 hour.
