Saute' ground beef and onion in saucepan, stirring until crumbly; drain. Add tomatoes; mash. Add consomme', soup and vegetable juice cocktail. Add vegetables, rice, salt and pepper. Stir in water. Simmer for 3 hours.

This is a great, hearty soup that is not super expensive to make an contains ingredients that most of us keep in our kitchen most of the time. Very easy and good!
Brown lightly the ground beef; drain off fat. Add rest of ingredients and simmer 1 hour. Add more liquid if needed.
You can exchange any of the vegetables in this recipe for almost any other type of vegetable you want for a different flavor.

Does anyone have a recipe for Hamburger Soup? I lost the copy I had.
Brown 1 pound of hamburger in a Dutch Oven with 1 cup of chopped onions and 2 teaspoons salt. Add 1 cup of chopped, peeled carrots and 1 cup of chopped, peeled potatoes.
Saute' meat. Add onions and cook 15 minutes. Add tomatoes, celery and seasonings. Cook slowly 2 hours. Add carrots and cooked veggies. Cook until done. Add beef broth if needed.
In a large saucepan or soup kettle, cook the beef, onions, carrots, celery and garlic over medium heat until meat is no longer pink and vegetables are tender; drain.
A quick and easy hamburger soup.
Brown ground beef and drain. Add soup mix and enough water to cover. Simmer for 10 minutes. Add vegetables and tomato juice or V-8.
Brown ground beef in soup pot. Drain pan drippings. Add remaining ingredients, mixing well. Cover and bring to a boil and reduce heat.
Brown meat and onions; drain well. Combine all ingredients in a large soup pan. Simmer, covered, at least 2 hours or all day!
