Skillet Zucchini Dish
- 1 1/2 cups sliced zucchini
- 1 1/2 cups sliced yellow squash
- 1 cup thinly sliced carrots
- 1 cup quartered mushrooms
- 2 Tbsp. cooking oil
- 1/2 cup Parmesan cheese
Cook and stir veggies in oil over medium heat 6-8 minutes until tender crisp. Sprinkle with parmesan cheese. Let stand 5 minutes. Makes: 4 cups.

I'm supposed to be eating healthier (what do doctors know :) and this is the way I"ve been cooking veggies for awhile now. You can add broccoli and carrot sticks also- cook them first because they take a bit longer than zucchini. I use olive oil- not much, add a bit of red pepper flakes for punch and reduce the amount of Parmesan. A little freshly grated Parmesan goes a long way. Delicious.
