Baked Carrots

Ingredients:

  • 1 lb. carrots
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2 tsp. butter

Directions:

Pare carrots and halve or quarter. Place in buttered 1 quart casserole. Sprinkle with combined salt and pepper and dot with butter.

Recipe: Baked Carrots

Ingredients

  • 1 lb. carrots
  • 3 Tbsp. butter
  • 1 Tbsp. sugar
  • 1/4 cup small onion
  • 2 eggs, slightly beaten
  • 1 cup cracker crumbs
  • 1 cup milk
  • 1 tsp. salt or to taste

Directions

Scrape carrots and cook until tender, about 10 minutes. Drain well. while carrots are still warm, run though food processor to grate. Mix all ingredients together. Put mixture in greased 2 qt. casserole. Bake at 350 degrees F for 30 minutes.
