Ingredients
- 3 Tbsp. chopped onion
- 1 Tbsp. butter
- 1 egg, lightly beaten
- 2 med. zucchini, shredded
- 1 lg. carrot, shredded
- 1/3 cup flour
- 1/3 cup Parmesan cheese
- 1 Tbsp. cornmeal
- 1/2 tsp. salt
- 1/4 tsp. pepper
Directions
Mix everything together in order given just until combined. In a large skillet, heat 1/4 cup oil and drop by tablespoon into hot oil and fry until browned on both sides. Serve with horseradish or eat on bread. Spread with mayonnaise or salad dressing and eat with a slice of tomato on top.
