Balsamic Steak and Veggie RollsThis is a super yummy low carb recipe for steak and vegetables. The colourful, julienned vegetables embraced by the juicy steak are so pretty. The sweet and savoury balsamic glaze is irresistible. Give this recipe a try!

Cook Time: 20 minutes

Total Time: 40 minutes

Yield: 8 rolls

Ingredients:

  • 1 lb flank or skirt steak, thinly cut
  • salt and pepper to taste
  • 1/4 cup balsamic vinegar
  • 2 Tbsp brown sugar
  • 1 carrot, julienned
  • 1 bell pepper, julienned
  • 1/2 zucchini, julienned
  • 1 tsp lemon pepper
  • 2 large cloves garlic
  • 2 tsp cooking oil

Steps:

  1. Season meat with salt and pepper. Rest at room temperature while preparing other items.

  3. In a small saucepan, add the balsamic vinegar and brown sugar. Mix well.
  4. Bring vinegar and sugar to a boil and reduce to almost half its volume. It should reach the consistency of syrup. Remove from heat and set aside.

  6. Give the two cloves of garlic a smashing whack with your knife.

  8. In a large pan over high heat, heat a teaspoon of oil and one of the crushed cloves of garlic.

  10. Add julienned carrot, bell pepper, and zucchini. Cook for 2 to 3 minutes.

  12. Transfer to a bowl and season with lemon pepper.

  14. Slice the steak into 3 inch wide strips. You can hammer them down a bit if they are too thick.

  16. Place the veggies in the middle of the piece of meat.

  18. Roll the sides up onto the veggies and secure with a toothpick.

  20. Using the same big pan over high heat, add the other teaspoon of oil and crushed garlic clove.

  22. When hot, add beef rolls to pan.

  24. Flip to cook all sides to desired doneness. I like mine medium, so about a minute and a half for each side.

This really sounds good. No zucchini but everything else is a go. I especially like the smashing whack and hammering bit...
