I just purchased a tan/black granite vanity top with a white under mount sink to go on a dark cherry vanity. The floor tile is a dark grey, slate color in 6 x 24 planks. The trim, window, toilet, and tub is bright white. What color should I paint the walls? I was thinking about a copper color, but now I think it might make the room too dark!

I think that you could go with copper if you like it. The "darkness" of the room will depend more, I think, on the quality and amount of the lighting, the size of the mirrors (larger mirrors, much more light), and the color of towels and shower curtain. Large mirrors, good lights, light or white accessories and towels will make quite a difference.
