Coco-Mango Glazed Palitaw

This sticky snack is called "palitaw" from the word "litaw" which means float. Its called palitaw because the round flat sticky pieces floats when they are being cooked.

Ingredients:

Steps:

    Palitaw

    1. Combine flour and sugar.
    2. Pour a small amount of water (not the entire 1/4 cup). Mix very well until it forms a dough. If it's too dry, add water. If too soft and wet, add more flour.
    3. Take a small portion and flatten in your palm.
    4. Drop flattened dough into boiling water.
    5. Wait until the pieces goes up and floats.
    6. When dough starts floating let it simmer for 2-3 minutes then remove from the water.

    Glaze

    1. Mix mango, sugar and water over low heat. Stir mixture until mango is a bit mushy.
    2. Pour coconut milk.
    3. Add brown sugar and stir.
    4. Simmer mixture and stir occasionally until it is reduced.
    5. Continue cooking the glaze until it's very thick.
    6. Now, pour the glaze over palitaw. Sprinkle with grated coconut or sesame seeds and serve.
