Coconut Macaroons

This is one famous dessert in the Philippines. We sometimes call this coconut muffin or cupcake. A very simple recipe even your kids can do and I'm thinking of including this in my Valentine day menu.

Ingredients:

Steps:

  1. Whisk butter until fluffy.
  2. Add in the brown sugar and continue mixing.
  3. Drop eggs one at a time as you continue to stir the mixture.
  4. When eggs are completely combined, pour the condensed milk and stir until well incorporated.
  5. Fold in dessicated coconut. Incorporate mixture very well.
  6. Line cupcake pan with cupcake liners.
  7. Scoop a spoon of the mixture.
  8. Place in every cup.
  9. Put raisins on the center top. (optional)
  10. Bake over 200C for 15 -20 minutes or when the top turns brown. Serve!
