Cucumber Kimchi

An easy to make side dish that pairs well with any Asian meal. You get a nice crunch and some spice (you can adjust the spice level depending on your preference).

Prep Time: 25 minutes

Cook Time: Set aside 12 hours

Total Time: Overnight

Yield: Side dish 2-3 people



  1. Chop cucumbers into your desired size.
  2. Place cucumbers in a bowl and mix with salt. Allow cucumbers and salt to marinate for 15-20 minutes.
  3. Meanwhile you can make your kimchi sauce. In a bowl, add korean red pepper powder, minced garlic, apple sauce, sugar, fish sauce and mix well.
  4. Try to scrape off some salt from the cucumbers. Then add kimchi sauce into bowl and mix.
  5. Allow cucumber kimchi mixture to sit at room temperature for 12 hours - overnight then into the fridge. Serves best chilled.
