I have literally hundreds of yards of fabric that I would like to donate. The fabrics vary and include cottons, denim, corduroy, knits, etc. I live in Colorado.

Where I live, many people who volunteer go on Freecycle to request items. Put an ad there
Sometimes a local stage theater needs certain types of fabric for costumes. It might be worth asking them if they want to pick and choose anything.
Check for a local chapter of Project Linus. They make quilts, blankets, and afghans for children in hospitals or in need of a blanket. They take donations of fabric or yarn.
You don't specify where you are in CO. I had read about this group, CO Fabric a while ago and it sounded interesting. Hope they can help you. It sounds like an interesting non-profit.
I do not usually recommend Craigslist or Freecycle as so often your "donation" will go to someone who sells for their own benefit. This is not necessarily a bad thing but it may be disappointing if you wish for your fabrics to go to worthwhile charity.
I usually check with local churches to see if they have (or know of) a good place to donate. You can call their offices and probably find out without making a trip.
I also donate to the local Hospice Thrift Stores as I know they are very legitimate and do good work in all communities. They usually love to receive nice fabrics and can use any kind of material where as so many big name charities will only accept 100% cotton.
Another good place to check out is your local Habitat Store as they love to receive nice fabric.
I do not donate to Goodwill but I have donated to the Salvation Army Thrift Store as they do good work in many communities and their prices are usually reasonable.
