Hello all! The stuffed hen in the photos above is roughly from anywhere between 2006-2008. It was purchased in the Eastern coastal side of the USA (not sure which state). Any idea what brand, (if not an off-brand), and where I can possibly buy or find a replica or similar?

It is always difficult to identify a plush that does not have a brand tag. Your hen does not look like it had a tag when purchased (unless the 'signs' are not in your pictures).
I remember that Cracker Barrel restaurants carried plush farm animals for many years and as a general rule, their toys did not always have brand tags. Stores that purchase a lot of an item, many times bought 'off market' look-alikes because they were less expensive.
You will have to do a frequent search on eBay. Hopefully it will come up sooner than later.
Maybe your hen is made by Russ Berrie. I found a bit similar stuffed Chicken at $19
