Instead of just pitching expired vitamins you can add them to compost or dissolve them in water and give it to your plants.

Put one vitamin tablet, I use Pre-natal Vitamins sold at Walmart, at the bottom of a dug hole for new transplants. As the tablet dissolves it feeds nourishment to the young plant.

I did this one year with some vitamins that were out of date, and everyone laughed at me...LOL... but i had a good crop of peppers that year! I'm glad to see others do this too, and now that i know it works, i will do it again~ (01/22/2006)
