Flourless Banana Cookies (GF)

The finished banana cookies.I keep bananas on hand and sometimes they get too ripe for us to enjoy. I don't throw them out. I either freeze them to use later or make these delicious cookies that are gluten free. They make a great snack especially when you are craving sweets or chocolate.

They are good right out of the oven (after cooling a little) or you can eat them at room temperature, refrigerated, or frozen. To be able to control myself, I have to freeze them.

Cook Time: 20-25 minutes

Yield: 12-15 cookies

Ingredients:

  • 1 banana
  • 1 Tbsp honey (optional)
  • 1 cup Rice Chex
  • 1/2 cup chopped pecans
  • 1/4 cup sweetened flaked coconut
  • 1/4 cup dark Chocolate morsels

Steps:

  1. Preheat oven 350 degrees F.
  2. Mash the banana.
  3. Mashing the ripe banana on a plate.
     
  4. Crush the Rice Chex.
  5. Cut the chocolate morsels in half or smaller if they are large.
  6. In a small mixing bowl, combine all ingredients. Amount of each will depend on the size of the banana. If needed, add more coconut, nuts, chocolate morsels, or crushed Rice Chex until the mixture is not watery.
  7. Mixing together the ingredients in a bowl.

  8. Place by spoonfuls on a baking sheet sprayed with Pam or lined with parchment paper.
  9. Bake 350 degrees F for 20-25 minutes until browned.
  10. Placing the cookies on a cookie sheet in the oven.
     
  11. ENJOY!!

I took one of these out of the freezer and put some ice cream on it. It tasted like a Nutty Buddy, my favorite ice cream cone!!

It was so good, I had to have another. Haven't eaten a Nutty Buddy since I was diagnosed with Celiac many years ago.
