Hi,
I have frozen cooked salmon use it in either a dip, spread or patties, otherwise, is kind dry. Let me know if you need a recipe.

However if you do decide to reheat, use the oven and wrap the fish in tinfoil with liquid

I would say yes. Of course you're going to wrap it in an air-tight package. I would also use it within 3 months, and cover it with a damp paper towel when you pop it into the microwave.

I would like to bake salmon and then freeze it for use the next day. Is this OK?

Why freeze it? If you are going to use it the next day, why not just put it in the fridge overnight?

I often have leftover salmon if I bake the whole fish for a meal and use it the next day in salads or sandwiches.

Yes, you definitely don't have to freeze it, next day would be fine to use it.
