Fudgy Whole Wheat Pumpkin Cake Brownies - brownies on a plateThis is a recipe I modified for cake brownies. When they were all done, I decided to concoct a quick sauce to pour over the top. This is sure to kick your craving! If you leave the sauce off, these are extremely lowfat since they're made with pumpkin and not oil.

Ingredients:

  1. In a bowl, add your sugar, pumpkin and cocoa. Mix well.

  3. Add your eggs and vanilla. Beat well.

  5. In another bowl, add your flour, baking powder, baking soda and the chocolate mixture from the first bowl. Add coconut milk. Mix well.

  7. Spread evenly into a greased, 13" by 9" baking dish.

  9. Bake at 350F for about 30 minutes, or until a knife comes out clean.

  11. For your sauce, melt your butter over medium/high heat in a pot.

  13. Immediately add your sugar, cocoa, vanilla and coconut milk. Stir continuously for about 3 minutes, or until well combined and hot.

  15. Pour over your brownies. I decided to make a bunch of slits with a knife to allow the sauce to soak in. Yum!:)

Do you mean pumpkin pie FILLING as opposed to just canned pumpkin? Doesn't that already have a lot of sugar and spices in it? Was wondering if that would be a tad sweet?
