Gluten-Free "Breadsticks"

The baked loaf of cauliflower ingredients.When you need a healthy substitute for bread, these were great! I made changes to the original recipe which have been included in parenthesis in the ingredient list. I like to change recipes to use up things I have on hand!

Ingredients for making gluten-free "breadcrumbs"
 

Steps:

  1. Preheat oven to 450 degrees F. Microwave riced cauliflower for 5 minutes in a covered microwave-safe bowl. When the cauliflower is cool, strain it to remove any excess liquid.In a mixing bowl, add strained cauliflower rice, the egg, Italian seasoning, 1/2 cup cheese, 1/4 teaspoon salt and 1/8 teaspoon pepper. Mix to combine.
  2. Mixing the riced cauliflower with the other ingredients.
     
  3. Transfer the mixture to a baking sheet lined with parchment paper. Spread out into a rectangle about 8 x 12 inches and 1/4-inch thick.
  4. Making a loaf of the cauliflower mixture.

  5. Bake in the oven 15-20 minutes until browned. Remove from oven and sprinkle the remaining 1/2 cup cheese over the top. Bake another 5 minutes until cheese is melted.
