Healthy Oatmeal Muffins

Healthy, delicious muffins that have so many variations to them. I will write the recipe as written. Some people replaced all or part of the flour with whole wheat flour. Some added 1 tsp. cinnamon and 1/2 tsp. vanilla. Others added nuts, raisins, craisins, berries, apples or bananas. You can have a different muffin every time!

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 12

  1. Grease muffin cups. Preheat oven to 400 degrees F.
  2. In a large bowl combine the oatmeal and the milk or yogurt. Let stand a few minutes to absorb.
  3. Add the egg, sugar and oil. Beat very well with a wire whisk.
  4. Add the flour, baking soda, salt, baking powder, cinnamon and vanilla (if you are using cinnamon and vanilla.) Mix until dry ingredients are moistened; do not overbeat.
  5. Spread the batter into the muffin tins.
  6. Bake for about 20 minutes. Serve hot.

These sound delicious! Could you tell me what type of oats you used? BTW, I love your spoon. So cute!

I used regular oats (not quick). I used the store brand in a round canister. I got the spoon as a Christmas gift a few years ago.
