Healthy Oatmeal Muffins baked in muffing tinHealthy, delicious muffins that have so many variations to them. I will write the recipe as written. Some people replaced all or part of the flour with whole wheat flour. Some added 1 tsp. cinnamon and 1/2 tsp. vanilla. Others added nuts, raisins, craisins, berries, apples or bananas. You can have a different muffin every time!

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Ingredients:

  • 1 cup dry oatmeal
  • 1 cup sour milk, yogurt or buttermilk
  • 1 medium egg (I used large)
  • 1/2 cup brown or white sugar (I used 1/4 cup Truvia brown sugar blend)
  • 1/3 cup oil
  • 1 1/4 cup flour
  • 1/2 tsp each baking soda & salt
  • 1 tsp baking powder

Steps:

  1. Grease muffin cups. Preheat oven to 400 degrees F.

  3. In a large bowl combine the oatmeal and the milk or yogurt. Let stand a few minutes to absorb.

  5. Add the egg, sugar and oil. Beat very well with a wire whisk.

  7. Add the flour, baking soda, salt, baking powder, cinnamon and vanilla (if you are using cinnamon and vanilla.) Mix until dry ingredients are moistened; do not overbeat.

  11. Bake for about 20 minutes. Serve hot.

I used regular oats (not quick). I used the store brand in a round canister. I got the spoon as a Christmas gift a few years ago.
