A delicious breakfast or a snack on the go! These oatmeal muffins are nutritious, and much better than the packaged, fat filled and way too sweet gas station version. These muffins are mildly sweet and go well with butter, jam, honey, or even just the way they are.

Total Time: 45 minutes

Yield: about 2 dozen

  • 2 cups quick-cooking rolled oats
  • 2 cups milk
  • 2 cups all-purpose flour
  • 2/3 cup sugar
  • 6 tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • 2 eggs
  • 1/2 cup canola oil


  1. Combine quick oats* and milk in a medium size bowl. Let soak 15 minutes.
  2. While the oats are soaking, combine the dry ingredients in a separate bowl. Set aside.
  3. In a small bowl, beat the eggs until combined. Add the oil to the eggs and beat until light.
  4. Ad

  5. Combine the egg mixture with the oats and milk.
  6. Make a "well" in the flour mixture and gradually pour in the wet ingredients. Mix gently, making sure all the flour from the bottom of the bowl is combined with the liquid.

  8. Pour into prepared muffin pans, each cup 3/4 full, and bake 18-20 minutes at 425 F.
  9. If you end up with spare batter, estimate how many muffin cups you will need to prepare. Fill the remaining cups halfway with water to prevent scorching and bake as normal.

*If you don't have quick oats, you can always chop up some old fashioned oats to recreate the texture. That's what I did for this recipe--turned out great!

Just heavenly for breakfast or any time of day.


  • 1 cup sifted flour
  • 1/4 cup brown sugar
  • 1/4 cup shortening
  • 1 egg, beaten
  • 1 cup milk
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup oats
  • 1/2 cup brown sugar
  • 4 Tbsp. butter
  • pecan halves


Mix softened butter and brown sugar and pat evenly in greased muffin cups. Arrange pecan halves in each. Mix the muffin ingredients until just combined. Fill muffin cups 2/3 full. Bake 20 minutes at 425 degrees F. Turn out onto platter.

Prep Time: 10 Minutes
Cooking Time: 20 Minutes

These make a great, soft muffin. Very hearty for any meal, but especially good at breakfast.


  • 1 cup flour
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 3/4 cup quick cooking oatmeal
  • 1 egg
  • 3 Tbsp. shortening
  • 1/2 cup milk
  • 1/3 cup chopped nuts


Sift dry ingredients; add uncooked oatmeal. Add remaining ingredients, stirring only until moistened. Fill muffin tins 2/3 full and bake 20 minutes at 400 degrees F.

Servings: 10-12
Prep Time: 15 Minutes
Cooking Time: 20 Minutes
