These make a great, soft muffin. Very hearty for any meal, but especially good at breakfast.

Ingredients:

  • 1 cup flour
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 3/4 cup quick cooking oatmeal
  • 1 egg
  • 3 Tbsp. shortening
  • 1/2 cup milk
  • 1/3 cup chopped nuts

Directions:

Sift dry ingredients; add uncooked oatmeal. Add remaining ingredients, stirring only until moistened. Fill muffin tins 2/3 full and bake 20 minutes at 400 degrees F.

Servings: 10-12
Prep Time: 15 Minutes
Cooking Time: 20 Minutes

Just heavenly for breakfast or any time of day.

Ingredients:

  • 1 cup sifted flour
  • 1/4 cup brown sugar
  • 1/4 cup shortening
  • 1 egg, beaten
  • 1 cup milk
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup oats
Topping:
  • 1/2 cup brown sugar
  • 4 Tbsp. butter
  • pecan halves

Directions:

Mix softened butter and brown sugar and pat evenly in greased muffin cups. Arrange pecan halves in each. Mix the muffin ingredients until just combined. Fill muffin cups 2/3 full. Bake 20 minutes at 425 degrees F. Turn out onto platter.

Prep Time: 10 Minutes
Cooking Time: 20 Minutes

Prep Time: 10 minutes

Cook Time: 15-20

Total Time: 30 minutes

Yield: 12 muffins

Ingredients:

  • 1 cup old-fashioned oats (not quick)
  • 1 cup unsweetened applesauce
  • 1/2 cup milk
  • 1 large egg
  • 1 tsp vanilla
  • 4 Tbsp butter, melted
  • 1/3 cup sugar (I used half the amount of Truvia brown sugar blend)
  • 3/4 cup whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup craisins or raisins, if desired

Steps:

  1. Preheat oven to 375 degrees F. Line muffin tins, or grease them.
  2. In one bowl, combine the oatmeal, applesauce, milk, egg, vanilla, butter and the sugar.
  3. In a larger bowl, whisk the flour, baking powder, baking soda, cinnamon, salt, and raisins, if using.
  4. Make a well in the center and add the applesauce mixture. Mix just until blended.
  5. Divide evenly in the 12 muffin cups.
  6. Bake 15-20 minutes. Don't overbake.
  7. Cool on wire racks.
